Konjac likes warm and humid, the optimum temperature is 20~30℃, 25℃ is the optimum temperature, and the suitable relative humidity is 80%~90%, that is, konjac likes a long period of suitable temperature and is not suitable for hot and dry places. As early as the ancient books such as "Ben Kuo Jing" and "Compendium of Materia Medica", it was recorded that konjac is cold in nature and has a flat taste. It can be used as medicine to reduce swelling and detoxification, and it is mainly used for carbuncle, swollen poison, scrofula and other diseases.

Konjac is rich in carbohydrates, low in calories, higher in protein than potatoes and sweet potatoes, rich in trace elements, and also contains vitamin A, vitamin B, etc., especially glucomannan, which has the functions of losing weight, lowering blood pressure, lowering blood sugar, and detoxification. Laxative, anti-cancer calcium and other effects.



Konjac processing steps:

1. Wash and peel

Konjac should be soaked before cleaning and peeling, so that the hard mud in the edges, bud eyes and grooves is soft and melted, and the cortex is brittle, so that it can be cleaned and peeled. Be careful to wear gloves when peeling by hand. Avoid itchy allergies. It is best to use a machine to wash and peel.

2. Slicing

After the konjac is peeled, it is cut into the desired slices and strips by a slicer for drying.

3. Fix color

If konjac is not processed immediately after peeling and slicing, severe oxidative browning will occur. Therefore, konjac must undergo color-fixing and antioxidant treatment before drying after slicing, and passivate active enzymes to protect the color and ensure product quality. In actual production, sulfur dioxide fumigation is often used to control browning.

4. Drying

The drying curve of konjac chips is complex. The drying process needs to be dried in three stages: high, medium and low temperature. The moisture content of the finished product is 13%.

The first stage: drying mode, high temperature dehydration and color fixation, the temperature is set to rise to 65 ° C, and the baking time is 1-2 hours. This stage does not dehumidify;

The second stage: drying + dehumidification mode, the drying room temperature is set to 60 °C, and the baking time is 3 hours to maintain dehumidification;

Three stages: the temperature is set at 55-58°C, the baking time is 6 hours, the heat pump working mode is drying + dehumidification, and large dehumidification is set;

Four stages: the temperature is set to 45°C, the baking time is 3 hours, the heat pump working mode is drying + dehumidification, and the end dehumidification;

Five stages: the temperature is set to 65°C, the baking time is 2 hours, and the heat pump working mode is the drying mode.
